The birth of an idea

While exploring Empordà in search of projects, experiences and ways of explaining everything we have in the territory, I often wondered how we could communicate it to reach more people. On my walks, He always ended up collecting something: romero, fennel, Thomillo ... and one day I asked myself a key question: Why are these herbs not packaged so that everyone can have them in their kitchen? Thus were born Herbs of the Empordà.

The secret formula and the first steps

I started to investigate and they told me about Dolors Freixes, A healer who had a beautiful space at home where she dried the herbs that she herself collected in Les Gavarres, Montgrí and Empordà forests. FUI A, And in a room full of hung herbs drying - I remember the evergreen, to Lavender, sage, The rosemary ... - We sat down in your living room and asked if I could help me create the formula of the typical herbs of Empordà. Right there, On paper, wrote the formula by hand. We both signed that document as a small pact between women in the territory.

When I decided to market herbs, The first step was to create a logo and the brand. I also decided to offer two versions: A mixture without salt and another with salt. To select salt, I traveled to the Ebro Delta and spoke directly with the Infosa owner, the Salt mines of the Trinity. Thus I got the salt to take its origin well indicated on the label.

Overcoming challenges and expanding the project

But there was still a challenge: Dolors warned me that I could not supply the amount necessary to produce a thousand jars and that in EMPORDà there was no large plantation to guarantee the entire process. Over time, And after much effort, We managed to start working with the parc dels aromes d’Empúries, thus achieving a proximity and ecological product, With all the essence of our territory.

After Herbs of the Empordà, A new product arrived: Flowers of the Empordà. This time, The formula could not have a better creator: The cook and alchemist of the flowers Iolanda Bustos, who knew how to capture the beauty and taste of the flowers of our landscape.
